Easy Salmon Sushi Bowl

This is an easy go-to when you are craving sushi but don’t want to go to your favorite sushi place or attempt to roll your own. This recipe takes ~30 minutes from start to finish and has minimal cooking involved, making it an easy one for those busy nights!
And in the words of my husband “this really tastes like sushi”!

Serves 2-4
Time ~30 minutes


  • Salmon Filet, 1 pound, skin removed
    • Season with chili powder, garlic powder, and onion powder to taste
  • 1 Avocado
  • 1 small-medium carrot, peeled
  • 1/2 English cucumber
  • Edamame beans, steamable bag
  • Sushi rice
  • Toppings, as desired
    • Examples: sesame seeds, eel sauce, teriyaki sauce, soy sauce, wasabi, seaweed


  • Season the salmon with seasonings to taste
  • Cook salmon in oven at 400 F until center is cooked thoroughly at 145 F
  • Cook sushi rice according to instructions
    • usually 1 cup water to 1 cup rice for a stovetop pot
  • While rice and salmon are cooking, slice your carrot and cucumber into small sticks (julienned)
  • Steam edamame right before assembling/serving
  • Assemble bowl with rice on bottom
  • Slice avocado and add to bowl
  • Top the assembled bowl with your favorite sushi toppings
  • Enjoy!
