Pasta Primavera


time: 20 – 30 minutes
serves: 4


  • 1 large carrot, peeled and chopped
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1 yellow squash, sliced into rounds and then halved
  • 10 cherry tomatoes, halved
  • 1/4 yellow onion, chopped
  • 4 garlic cloves, diced
  • 1 tablespoon italian seasonings
  • 1/4 cup extra virgin olive oil
  • 8 oz (half box) of curly pasta
  • parmesan cheese


  • preheat oven to 450F
  • in a large bowl – toss carrot, red and yellow bell peppers, squash, cherry tomatoes, onions, and garlic in the olive oil and italian seasonings
  • spread evenly on a baking sheet
  • bake for 10 minutes, flip vegetables, bake another 10 minutes
  • while the vegetables are cooking, boil water
  • add the pasta to boiling water, turn the water down to medium
  • when pasta is done, drain off the water and put back into the pot
  • add vegetables to pasta, toss well
  • serve immediately with parmesan cheese
