ingredients:
- 1 pretty large purple sweet potato
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 teaspoon rosemary
instructions:
- preheat oven to 400F
- wash the sweet potato really well
- peel the potato, if you leave some skin that’s ok
- cut the potato into fries
- rinse fries under cold water
- dry the fries completely
- in a mixing bowl – add olive oil, garlic, and rosemary
- toss until evenly coated
- lay flat on a baking sheet
- cook for 15 minutes and then flip the fries over
- cook another 10 minutes until done
- if you like your fries crispier, allow them to sit under the broiler on high for a few moments
- watch fries closely while broiling, they go from perfect to too crispy in a split second!
They may not be as colorful or pretty as they were before baking, but they are hella good! trust us.
