Rosemary and Garlic Purple Sweet Potato Fries


time: 30 minutes
makes: 2-4 servings

ingredients: IMG_6131-1

  • 1 pretty large purple sweet potato
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon rosemary


  • preheat oven to 400F
  • wash the sweet potato really well
  • peel the potato, if you leave some skin that’s ok
  • cut the potato into fries
  • rinse fries under cold waterIMG_6132-1
  • dry the fries completely
  • in a mixing bowl – add olive oil, garlic, and rosemary
  • toss until evenly coated
  • lay flat on a baking sheet
  • cook for 15 minutes and then flip the fries over
  • cook another 10 minutes until done
  • if you like your fries crispier, allow them to sit under the broiler on high for a few moments
    • watch fries closely while broiling, they go from perfect to too crispy in a split second!

They may not be as colorful or pretty as they were before baking, but they are hella good! trust us.
