Loaded Mashed Cauliflower


time: 25 minutes
equipment needed: pot (or steamer) and mixer (or food processor)


1 cauliflower head, chopped
1 garlic clove, minced
3 tablespoons butter
2 tablespoons sour cream
salt and pepper, to taste
bacon bits
fresh chives, cut into small pieces
shredded cheddar cheese


  • cook the cauliflower until tender, I always cook it until a fork goes through it easily
    • we steamed our cauliflower
    • if you boil it, remember to drain the water once it is done
  • once done, put it into a food processor or mixer
  • however you do it, you need to mash the cauliflower
  • add garlic, butter, sour cream, and salt & pepper taste
  • mix well
  • serve mashed cauliflower while still warm
  • top with shredded cheese, chives, and bacon bits
    • if you serve in oven-safe ramekins, you can put in the oven for a moment to melt the cheese before adding bacon and chives
